Walnut & Goat Cheese Appetizer


Need an easy and delicious appetizer that requires just a few ingredients and minimal time to prepare? I’ve found this goat cheese creation to be a crowd pleaser. It’s great served cold or at room temperature with red wine and Kashi crackers.
You’ll Need:
• 8 ounces goat cheese (My favorite is Belle Chevre)
• ¾ cup walnuts
• Honey
1.) Spread walnuts on a cookie sheet and toast at 350 degrees for 10 minutes.
2.) Let walnuts cool. Pour on to chopping board and chop to desired size.
3.) Shape goat cheese into a disc-like shape and then roll in walnut pieces.
4.) Drizzle honey over cheese.

The House Guest

This is the face I woke up to this morning - my houseguest for the next week, Charlie.


He snuck into my bed when I went into the kitchen for a glass of water and will be my live-in buddy for the next week while his folks are away. We're planning on some early morning runs, walks in the park and other adventures. Good times to come. Happy Memorial Day Weekend Folks!

This is my friend Kate.
Kate and her pup Barnabas will be leaving their home in Birmingham, Ala. later this year to serve in La Ceiba, Honduras.
There are over 50,000 street children in Honduras. That means there are 50,000+ children without a home, without three square meals a day, without a place to rest there little heads at night, without a mother or father to tell them how special they are or give them a hug.
Kate, believing Christ has called her to be His hands and feet in La Ceiba, is compelled to serve these little ones.

The Desk Lunch

There are days when my work schedule is so tight that lunch away from the desk is not an option. The past couple of weeks, I’ve enjoyed afternoon runs on a nearby trail during my lunch break.

For either situation, Green Giant sells a line called Health Blends that provide quick, healthy and inexpensive desk lunch options.

Shrimp Spring Rolls

On a recent Whole Foods adventure, summer rolls –made with rice paper- were being served as samples. I loved the fresh, light flavor and crunch of the carrots mixed with ginger, cucumber and shrimp but figured the dish was too complex for my rookie culinary skills (how do you wrap delicate rice paper without it tearing?).
Imagine my delight when I came across this helpful recipe in the May edition of Health:


The above recipe produces a sweeter, fruity taste than my variation that is loaded with veggies and has a bit of bite due to the fresh ginger sauce:
You’ll Need:
8, 8-inch round sheets rice paper (Whole Foods has these in their ethnic section)
1 cup mixed greens
1 cup carrots, julienned
¼ green onions, chopped
1 ½ cups cooked bean threads
16 medium, cooked, peeled and de-tailed shrimps

1.) Fill a large, shallow dish with warm water.
2.) Wet a clean, kitchen towel; wring out and place on a clean work surface.
3.) Place one rice paper sheet in water; soak to soften (about 30 sec).
4.) Removed from water; place on towel.
5.) Working quickly, place 1/8 of greens facedown in center of paper, leaving space free on all edges of paper.
6.) Layer shrimp then other ingredients on top of greens.
7.) Pull bottom of wrapper over filling, fold in sides, and roll wrapper into a cylinder.
8.) Repeat with other seven rolls.
9.) Keep refrigerated until ready for use.

For Ginger Dipping Sauce:
¼ cup olive oil
1 TBSP soy sauce
¼ lemon, juiced
1 clove garlic, minced
1 TBSP minced fresh ginger root
¼ tsp. Dijon mustard ¾ tsp honey

1.) In a small bowl, whisk together the soy sauce, lemon juice, garlic, ginger, mustard, and honey.
2.) Once these are thoroughly combined, add the oil in a steady stream, whisking constantly.
3.) Chill until ready to serve.

Tornado Relief

Yesterday a group of my co-workers and I traveled to Pratt City to help with the tornado relief work.

We were overwhelmed by the vastness of destruction, the lives which have been impacted and the work that has to be done.

In all of this, I cling to the Lord's sovereignty as well as the importance of getting outside of my 4x6-inch world and helping others. This life is not our own. It was bought with a high price, and I'm striving to not waste it. The suffering and destruction we saw yesterday is a great reminder of these truths.

Kelly's Scrumptious Lasagna


There's just not much better than a homecooked meal you didn't have to cook. My sweet co-worker Kelly surprised me with some of her family's leftover lasagna yesterday. They've been without power several days after last week's tornadoes so when the power came back on, she was in full cooking mode.

My lasagna portion didn't make it to lunch time but was scarfed down for a mid-breakfast treat. I'm usually hesitant to try for homemade lasagna since it takes so long to make and the frozen variety is so darn good. But Kelly convinced me of the ease of hers - not to mention how scrumptious it tastes! Check out her recipe below. I'll add a photo when I make some later this week.

Ingredients:

-DaVinci's lasagna noodles (you will need 9 noodles, so one box will do)
-Approx. 1.25 lbs of ground beef (I use 85/15)
-1 extra large jar of Prego Spaghetti Sauce (I use the original or mushroom)
-1 medium container of small curd cottage cheese (I use lite)
-2 eggs
-Sliced Provologne cheese (you will need approx. 15 slices) - Walmart sells sliced package of 17-18 slices

Prepare:
1.) Place a large pot on the boil. Put in 2 to 3 tablespoons of olive oil. When water boils, put in 9 to 10 lasagna noodles and cook according to directions. Drain.

2.) Season ground beef with salt, pepper, garlic salt and Italian seasoning. Brown. Drain.

3.) Put beef back into pan and pour in Prego sauce. Heat on low.

4.) Combine cottage cheese and eggs. Beat until mixed well.


5.) In a 9x13 pan, spoon in a small amount (very thin, see-thru layer) of beef sauce - just enough to cover the bottom. This will keep the noodles and other ingredients from sticking.

6.) Place a layer of noodles (3) on top of the beef.

7.) Spoon in a solid layer of beef sauce.

8.) Place a layer of cheese on beef mixture (approx. 6 slices).

9.) Spoon in a layer of cottage cheese mixture (1/2 of total amount).

10.) Place a layer of noodles (3) on top of cottage cheese mixture.

11.) Next is a layer of beef.....almost all.

12.) Add a layer of cheese.

13.) Finish with remaining cottage cheese mixture.

14.) It may seem too full, but go ahead a put another layer of noodles, then the last very thin layer of beef.

15.) On top, cut strips of remaining cheese slices.

16.) Bake at 350 for about 35 minutes.
